Food stabilisers and emulsifiers

In the world of food science, stabilisers and emulsifiers play a decisive role in shaping the quality and consistency of products.

Emulsifiers are substances that combine two or more immiscible liquids (oil and water) into a stable mixture called an emulsion. The most common emulsifiers include lecithin (found in egg yolks and soya beans), mono- and diglycerides, and polysorbates.

Stabilisers maintain an even dispersion of ingredients and prevent the components from separating. These are usually hydrocolloids (substances that bind water) such as guar gum, xanthan gum and pectin, which provide structure and viscosity.

The role of emulsifiers and stabilisers in the food industry

  1. Emulsifiers allow fats and water to stay mixed in a single smooth, uniform texture.
  2. In emulsions without emulsifiers, the different phases separate over time. Stabilisers hold these phases together for a long time, preventing separation and sedimentation.
  3. They add viscosity and density to products, giving them the desired mouthfeel. For example, in ice cream guar gum prevents the formation of large ice crystals, so it has a smooth, creamy texture.
  4. By maintaining uniformity, stabilisers and emulsifiers help extend shelf life.

Applications

In meat processing:

  1. Sausage products (cooked, smoked, semi-smoked and dry-cured sausages) – even distribution of fat and water, preservation of shape and uniform texture.
  2. Ham and bacon: retention of moisture and shape during cooking and storage.
  3. Meat pâtés, mince and pastes: slowing moisture loss, ensuring a uniform consistency and preventing the ingredients from separating.
  4. Canned meat: texture and shape of the meat in canned form, preventing fat separation.

In dairy products (milk, yoghurt, cheese) – they are crucial for maintaining smoothness and creaminess:

– Ice cream: stabilisers prevent the formation of ice crystals during freezing and ensure a smooth texture.

– Cheese: emulsifiers blend fats and water, creating a uniform, easily spreadable cheese product.

– Yoghurt: pectin and gelatine ensure the required thickness and prevent whey separation.

Emulsifiers are essential in sauces and dressings for mixing oil and water, creating a stable creamy mixture.

– Mayonnaise: lecithin (found in egg yolks) acts as an emulsifier, combining oil and vinegar.

– Salad dressings: polysorbates and other emulsifiers ensure a uniform texture.

In confectionery and bakery products:

– Chocolate: lecithin reduces the viscosity of chocolate, making it easier to mould and giving a pleasant mouthfeel.

– Cakes and pastries: emulsifiers improve the aeration of the dough, so the baked goods turn out lighter and fluffier.

In beverages they ensure uniformity:

– Flavoured milk: they prevent the added flavourings from separating.

– Cream: mono- and diglycerides maintain the mixture of fats and water.

Innovation and the future

There is currently growing demand for natural and environmentally friendly products, which is leading to a search for natural sources of emulsifiers and stabilisers (seaweed extracts and various plant gums). They are perceived as healthier, more environmentally friendly alternatives to synthetic additives.

Advances in processing technology are paving the way for more refined emulsions. Methods such as microfluidisation and ultrasonic emulsification can produce finer, more stable emulsions.

The future of stabilisers and emulsifiers is also linked to sustainability and functionality. The development of bio-based and biodegradable additives not only meets consumers' needs for more environmentally friendly products but also addresses environmental concerns. In addition, multifunctional additives that can act as both emulsifiers and preservatives are being explored, in order to optimise formulations and reduce the need for numerous additives.

Stabilisers and emulsifiers play a key role in maintaining the quality, texture and stability of a wide range of products. From extending shelf life to improving texture, they ensure that our favourite foods remain pleasant to eat and stable. As demand for natural and environmentally friendly products grows, continuous innovation in stabiliser and emulsifier technology promises a future in which products will be not only of high quality but also in line with health and environmental values.
