Carfosel 997 phosphate is a phosphate salt with a high sequestering capacity and an alkaline pH. Readily soluble, it interacts with proteins and cations in various food systems, increasing the firmness of finished products, stabilising colour, extending shelf life, increasing water-holding capacity and promoting emulsification.

Carfosel 997 phosphate is a sodium tripolyphosphate in powder form that dissolves quickly when stirred and added slowly to brine. Cold conditions increase the dissolution rate. Treated products retain their juicy appearance as well as their natural nutritional properties, texture and colour.
