Description

Prodamul Red Ultra – a broad-spectrum colourant used in the meat processing industry. It is obtained by fermenting rice flour or rice with Monascus moulds. The result is a colouring ferment that gives the product the desired shade.

Key facts about Prodamul Red Ultra

  • Resistant to oxidation, light and high temperatures.
  • The colourant should be added to the meat batter at the very beginning of preparation.
  • Fermented rice does not affect the taste or smell of the finished product.
  • Recommended dosage of Prodamul Red Ultra – 0.03–0.1%; for making granules – from 0.1 to 0.3%.
  • The food additive has no E-number in its composition, so it provides a "clean label" for the products you make.

Other features of Prodamul Red Ultra

  • Widely used in the production of smoked, cooked and cooked-smoked sausages, as well as pâtés, meat loaf and other products.
  • Fermented rice is used to compensate for the loss of colour in meat raw materials when food ingredients and various substitutes are added.
  • This blend is distinguished by its high colour intensity (1200).
