CARFOSEL B 915 Prayon phosphate is suitable for ham as well as for all injected products. It stands out for its high quality and excellent properties. In addition, this product is recommended for marinades and brines with a high phosphate and salt content. The product works in a unique way, binding water to proteins while increasing the firmness of finished products.

Product information

Consists of sodium tripolyphosphate E 451 and sodium polyphosphates E 452.

Used in the dairy, meat and fish industries.

Functions: antioxidant, colour fixative, stabiliser, acidity regulator, emulsifier, moisture-retaining agent, complexing agent.

E451 is used to make special sports drinks and is in demand for the production of sterilised and pasteurised milk, ice cream, pasta, minced fish, glazes, confectionery, spreadable margarine, baked goods, etc.

E452 is used in the production of glazed and canned fruit, processed and young cheeses, potatoes, flour and bread products, sausages and meat products, milk, dairy desserts, and artificially mineralised and flavoured drinks.

The recommended dosage of this product is 0.1 to 0.4%.

pH of 1% solution: 8.8–9.5; P2O5 content: 57.0–59.0.

Storage conditions: ambient temperature not exceeding 25 degrees, humidity up to 75%, original packaging.
