Carfosel 994 phosphate is a phosphate salt with a high protein extraction capacity at alkaline pH. It dissolves easily and interacts actively with proteins and cations in various food systems, stabilising colour, extending shelf life, improving moisture retention and promoting emulsification.

Carfosel 994 is a sodium tripolyphosphate with outstanding dissolution properties. Its granular form ensures stable and complete dissolution in all types of brine. In addition, CarfoselTM 994 dissolves faster in cold liquid.

Carfosel phosphates are specially developed for use in the meat and fish industries, interacting uniquely with proteins to bind water and increase the firmness of finished products. Treated products retain their juicy appearance as well as their natural nutritional properties, texture and colour.
