Cheese stopped being just a standalone product long ago. It is used as a filling in sausages and grilling sausages, burgers, snacks, hot appetizers, and foodservice products. When consumers see cheese in the product name, they expect a very specific experience. A distinctive flavor, visible cheese inclusions, a pleasant texture, and an appetizing result after heating.

However, temperature often becomes the main test for such a product.

Cheese may melt excessively, leak out, lose its shape, or turn into a paste-like mass inside the product. As a result, the component intended to increase the product’s consumer value becomes practically unnoticeable.

But what if this behavior could be controlled?

Cheese can then be viewed much more broadly. Not only as an inclusion in a meat product, but as the basis for a separate category. Cheese steaks for grilling, medallions, snacks, cheese kabanos, and portioned foodservice products.

This is exactly how heat-stable cheese technology works.

For a meat processing company, it is attractive for another reason as well. Some of these products can be manufactured using the technological infrastructure and equipment the company already operates.

What Is Heat-Stable Cheese?

In food manufacturing, heat stability means the ability of a cheese product to retain specified characteristics when exposed to heat.

The objective is not to prevent the cheese from reacting to heat at all. What matters is achieving controlled behavior that corresponds to the specific product and its preparation method.

For a sausage or grilling sausage, this may mean visible cheese inclusions that do not disappear inside the meat matrix.

For a cheese medallion or steak, different characteristics matter. The product must retain its shape and texture during subsequent frying or grilling.

The technological logic appears quite simple:

cheese base → functional system → structure formation → heat treatment → stable product for further use

However, the result is not determined by a single ingredient. The formulation, raw material temperature, degree of comminution, sequence of ingredient addition, bowl-cutting parameters, forming, and subsequent heat treatment all matter.

Cheese in Meat Products

For a meat processing company, the most obvious application of heat-stable cheese is found within already familiar categories:

  • cheese-filled sausages
  • grilling sausages
  • burgers
  • meat snacks
  • fillings

Chopped semi-finished products.

The combination of meat and cheese is already familiar to consumers. The manufacturer’s technological task is different. To ensure that the cheese genuinely creates value in the finished product:

  • a visible inclusion creates a visual effect on the cut surface
  • controlled behavior during heating influences the consumer experience
  • flavor variety makes it possible to develop a single product platform into several SKUs

Cheese Kabanos: A Familiar Format with a Completely Different Product

Kabanos has a very strong visual code.

Thin. Portioned. Easy to hold. Immediately associated with a snack.

Now let us keep the format and change the product. There is no meat inside. There is cheese inside.

This is how Prodservis developed the concept of cheese kabanos: a cheese snack in the format of a kabanos or thin sausage, with contemporary flavors:

  • spicy
  • smoked
  • truffle
  • chili
  • green herbs.

This format has an important marketing advantage. Consumers do not need an explanation of how to eat it. The shape already suggests the occasion.

Open the package. Take it with you. Have a snack on the road, at the office, after a workout. Or add it to a snack box.

Cheese Steaks and Medallions: Entering the BBQ Category

Cheese does not have to remain a component of a sausage or simply be a snack. It can become the basis of a standalone product for grilling.

Imagine a thick, golden medallion on a hot grill grate. The surface browns quickly, an appetizing crust forms, and the aroma of cheese blends with grilled notes. Inside, the cheese texture remains soft and juicy. The steak retains its shape. It can be turned with tongs, placed in a burger, or served hot with vegetables and sauce.

This is what a heat-stable cheese steak can be.

For the manufacturer, the appeal of the format lies in its versatility. The core concept can be developed into an entire product line:

  • classic creamy flavor
  • jalapeño
  • tomato and basil
  • paprika
  • aromatic herbs
  • smoked and BBQ flavor profiles

The shape, thickness, portion size, flavor, and packaging can all be varied. One solution can be used to create products for Retail, Foodservice, seasonal BBQ ranges, or Private Label.

A cheese steak also offers an opportunity to look at existing production in a new way. Some of the processes and equipment used every day by a meat processing company can potentially be used to launch such a product. Whether a specific line is suitable is determined following an assessment by food technologists.

The best way to understand the potential of a cheese steak for your product range is to see it on the grill and taste it.

What the Manufacturer Gains

  • Heat stability up to 250 °C. A cheese steak or medallion can be fried until it develops a golden-brown crust and distinct grill marks while retaining its shape and juicy cheese texture inside. In grilling sausages and sausages, the cheese remains a visible, appetizing inclusion after heat treatment. For the manufacturer, 250 °C means the freedom to create products in which the cheese withstands high temperatures and already looks appealing on the plate.
  • Low weight loss. During heat treatment, weight loss is only 15–20%. This figure is significantly lower than for meat-based counterparts. More finished product from the same quantity of raw materials means a better yield and more attractive production economics.
  • Shelf life of up to 8 weeks. The finished product retains its characteristics for up to 8 weeks [to be confirmed against the technical specification], giving the manufacturer more time for distribution and a significantly wider sales geography.
  • An innovative product for the Ukrainian market. Cheese kabanos and steaks make it possible to enter the shelf with an unusual format. This is an opportunity to occupy a new niche and establish your own category ahead of competitors.
  • No additional equipment required. A new cheese product line can be integrated into existing production using the company’s current equipment and expertise.
  • Gouda, cheese product, smoking, and spices. Natural Gouda delivers a rich, recognizable cheese flavor. A cheese product makes it possible to work with different SKU economics. Smoking adds an aroma that works particularly naturally in kabanos and grilling products. The range can then be expanded with chili, herbs, paprika, BBQ, and other flavor profiles.

As a result, the manufacturer gains a technological platform for an entire product category. Golden-brown cheese steaks and medallions for grilling, thin cheese kabanos for snacking, cheese inclusions for meat products. And different flavors and formats for retail and foodservice. One direction creates several opportunities at once for launching and scaling the product range.

And for Consumers, It Is Simply Delicious

Global snacking is changing. Consumers are no longer satisfied with a small package that is easy to toss into a bag. They expect more from a snack: protein, convenience, and a new consumption experience.

In 2026, Circana (a global American market research, data analytics, and consulting company) recorded simultaneous growth across several snack categories, including yogurt, protein bars, meat and cheese snacks, popcorn, and fresh foods. This confirms that growth in snacking does not depend on one category. It is happening across several areas at once, where functionality and convenience matter more than familiar packaging.

Cheese itself is changing as well. Instead of the traditional piece on a cheese board, bars, puffs, sticks, cubes, and other on-the-go formats are emerging. People take them to work, put them in a lunchbox, eat them on the road, between meetings, or before or after a workout.

Retailers are already reorganizing their shelves around this behavior. Grab-and-go areas featuring cheese products are expanding beyond convenience stores and appearing in traditional supermarkets.

Cheese kabanos fits this occasion naturally: familiar cheese takes on the format of a contemporary snack. Portioned, convenient, full of flavor, and unusual enough to make consumers want to pick it up from the shelf and try it.

A cheese steak responds to a different demand: a new culinary experience without complicated preparation. A grill, a golden-brown crust, a cheese texture, and just a few minutes until the dish is ready.

For consumers, the choice becomes broader: cheese can do more than sit sliced on a sandwich. It can be taken along as a snack, placed on the grill, added to a burger, or turned into a quick hot meal.
